The vegan kofteh they serve here is known in Turkey as çiğ köfte. Traditionally made with raw beef, across Turkey the dish was replaced with cracked bulgur as a main ingredient due to public health concerns. The version here was as delicious as the best ones in Istanbul. The flavor is truly unique – simultaneously incredibly rich from the blend of spices while tasting healthy and light given the composition of ingredients. Topped with some pomegranate molasses and a general dose of lemon juice, these morcels are truly satisfying.
